Strawberry Baked Oatmeal {Recipe}

As I was beginning to make baked oatmeal one recent morning, my 3 year old asked me to put strawberries in it. Since I had frozen strawberries, I thought I would delight her and give it a try.

At first I struggled with getting the whole, frozen berries to chop in the food processor. Then my 7 year old suggested I try putting them, with the milk, in the "smoothie maker" (aka blender).

That worked like a charm and we all enjoyed our new favorite breakfast, strawberry baked oatmeal!

Strawberry Baked Oatmeal Recipe (makes one 9x13)

  • 6 cups oats
  • 1/2  cup white sugar
  • 1/2 cup brown sugar
  • 2 tsp. salt
  • 1 tsp. baking powder
  • 1 cup oil
  • 4 eggs, lightly beaten
  • 2 cups milk
  • 2 cups strawberries

1. Combine dry ingredients in large bowl.

2. Add oil and eggs.

3. Blend milk and strawberries in blender.

4. Combine all ingredients.

5. Pour into greased 9x13 pan.

6. Bake uncovered at 350 for 35-40 minutes.

    I have a similar recipe, but have used blueberries. It’s really good!

  5. Only 2 of us eat breakfast in my family of 3. Does it save/warm up well or do you know? I’m sure I could only make half a recipe or so, but the thought of yummy baked oatmeal that we could just nuke in the morning sounds great, too!

  6. That sounds yummy! I am starting to make oatmeal for my baby, and it just didn’t sound appetizing to me(ground oatmeal +water or formula+whatever I have pureed and frozen for her), but your baked oatmeal sounds delicious!
