Potato Soup Recipe

For a yummy and cheap cold weather dinner, we often have potato soup.

If I have bacon or sausage on hand I will use that in the soup. If not, I leave it out. Here is the basic recipe, although I usually improvise.

Potato Soup Recipe

Bacon or sausage (optional)
1 diced onion
5-6 potatoes
1-2 Cups shredded cheddar
cream of mushroom soup
1 Cup sour cream

Brown sausage or bacon with the diced onion. Dice potatoes and add to browned onion. Add enough water to cover. Boil about 15 minutes, or until potatoes are tender. I use the back of a big spoon to smash the potatoes a little. Add shredded cheddar to taste (I use about 2 cups) and cream of mushroom soup and whisk to mix. Remove from heat and add sour cream.

  5. Potato soup was one of my absolute favorites before I realized I was allergic to dairy. I’ve been afraid to try to make it with my milk alternatives because I don’t think it will taste quite rights. I have a fabulous crock pot version if you’re interested in it I can email it to you.

  11. Did you scale that down to a smaller family or does that really feed your bigger family? We are a family of 5 and I don’t know if that would fill us up. Maybe we just eat a lot.
